NGREDIENTS (Nutrition)
* 6 eggs * 2 tablespoons milk * 1 tablespoon all-purpose flour * 2 cups shredded Cheddar cheese * 1 (2 ounce) cans chopped green chilies * 1/4 pound cooked chopped bacon
DIRECTIONS
1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9 inch pie plate. 2. Whisk the eggs in a large bowl. Stir in the milk and flour, then mix in the green chilies and cheese. Pour into the prepared pie plate. 3. Bake in the preheated oven until the center is set, about 35 minutes.

I find this really interesting because while I'm not entirely a fan of eggs, I find myself intrigued by this combination. You mentioned it's like a quiche, though I'm wondering if this would be served a bit more as a side?
That and I'm also curious of the origins.

If I am not mistaken it is Mexican smile You could use it as a side .. but it also works on its own smile or with other things as it's side smile
