serving for one person
two eggs (beaten but add NO MILK!!!)
half a large tomato, or two small/med ones (any kind will do, but if you're using the smaller variety, ie: roma, cherry, etc.; then you will need to use more): cubed or sliced
Meat: I prefer to use some type of sausage meat for this dish (as it's already well flavored), but you can use any type of meat: just enough for you to eat!!!
a bit of salt
a bit of black pepper
Cilantro (1/4 of a bunch) chopped up
1-2 stalks of green onion: chopped up
one piece of garlic: minced/chopped up
1-2 tblspn of oil
Cooking time:
heat up a frying pan/wok (at med-high temp) then add oil and get it hot
add the garlic and brown it lightly
add the meat
when the meat is halfway cooked, add the tomatoes
when the meat is throughly cooked, add the cilantro, green onions, salt and black pepper
cook for about only a min
add the beaten eggs cook to your preference (usually, I turn off the heat just before I add the eggs as I like my eggs not fully cooked)
Can be served with your choice of toast or rice (I prefer rice smile !!!)
