yes sir, very canon infact he survives decides to continue hunting Han Solo in a new ship Slave II and eventually comes upon the mantle of Mandalore.
no slimy tentacle monster can rape and digest the greatest bounty hunter in galactic history.

He gets out by shooting his rocket at te Saarlac and then gets rescued by Dengar and Neela.

Yes, like most of the cool, badass villains in the Star Wars universe [Darth Maul (YES, one of his "resurrections" were cannon) and Darth Sidious], Boba Fett does survive the Sarlacc and goes on to do bigger and badder things. And it's cannon.
