I have a whole list of things I love to add to instant noodles to bring them up onto the level of a higher calling.

One caveat, these additions will NOT work with the neon yellow Maruchan or Top Ramen junk. There is no saving these abominations. Their artificial color and flavors will thoroughly ruin anything you add to it, so there's no point.

Can we get better ramen noodles at Asian Markets?

I've seriously been craving ramen badly, and I don't think I'm going to get my bowl at Fujiya this weekend. D: Might as well try to make my own.

Yes, some Asian markets have whole aisles dedicated to instant noodles.

Some have dehydrated veggies in them, you can get kimchi flavored, soy sauce pork flavored, curry flavored, shrimp flavored etc.

There's no denying that the broths are as sodium and MSG packed as any other processed junk food, but at least its substantial and tastes and looks like real food.

You can also get instant noodles not only with the typical curly yellow noodles but rice vermicelli and bean thread noodles are also available in just-add-water format.

For really quick and easy homemade soup noodles, we keep jars of homemade chicken or pork stock in the fridge or freezer.
That rich base can easily be transformed into a delicious noodle broth with just some stir fried meat and veggies, a dollop of sauce or a splash of soy in minutes.

I had a bowl of beef ramen at Fujiya Sunday night.

It. was. divine.

And I must try to recreate it.

Next time I'll try the pork ramen.. then the chicken one.. then the shrimp one. =D

But omg srsly, the bowl was huge. I split it with Clint.

Cheesy Tuna Ramen (With Egg!)

You will need:
Stove or hotplate
Small Pot
Bowl + eating utensils
(probably a fridge to keep ingredients in)

Ingredients:
1 pack Ramen (I used plain with a chicken oxo)
1 can Tuna (drained!)
1 egg
Grated Cheese
H2O
Soya Sauce (optional)

Cooking:
In a small saucepan (I used a 2quart pot, if you're using a bigger one just make sure you dump out more water before you flavor) boil enough water to JUST cover a package of ramen. Cook the noodles until they're ALMOST done. While they're cooking, dump your tuna into the bowl you're going to be using. When the noodles are almost finished, scoop them out over the tuna with VERY LITTLE water. (At this point I pour a little soya sauce over the noodles)
Pour your flavor into the water (whatever's left in the pot will go over top later) and mix, then crack an egg in and let cook. Cover your noodles with cheese (I used marble chedder) and let that sit. When your egg's done cooking, scoop it over top of everything, and pour the broth in to the brim of the bowl.

Chinese-American Style Fried Ramen

INGREDIENTS:
1 ramen pack. Flavor doesn't matter; you won't use it.
1 egg
Soy Sauce
Cooking oil (I like sesame!)

DIRECTIONS:
1. Boil the ramen until it's cooked. Then drain the water.

2. Put some oil in your wok (you can use a straight up sautee pan if you need to) and heat it up.

3. Add the noodles and make sure you keep them moving!

4. Crack in your egg, making sure to quickly break the yolk and mix it in the noodles.

5. Add soy sauce until the noodles are a nice toasty brown.

6. Get your chopsticks!

RAMEN TACOS

Level of difficulty: heart

You need:
Fridge for tortillas/left overs
pot
stove top/hot plate
camal or microwave

Ingredients:
Ramen [any flavor, any brand]
Soft tortillas [store-bought or home made]

Directions:
1. Cook ramen any way you please and drain the water

2. Warm up tortillas on a camal [or microwave, if you so desire]

3. Combine. biggrin

instant ramen egg drop soup
difficulty: heart

ingredients: instant ramen packet (with your flavor or choice), two eggs, H20, seasoning


step 1: fill a pot with 2 cups of water and bring to a boil

step 2: drop in ramen noodles and the flavor packet (you may add less if you don't like the saltyness), and boil for 3 minutes

step 3: in the last minute, crack both eggs and plop them into the boiling water. stir constantly and make sure you break the yolk. this is how the egg gets cooked. make sure every little bit is cooked, so even if the timer has gone off, you MIGHT have to take some more time to get the egg thoroughly cooked. you don't want to be eating egg drop soup and find raw egg goop! sweatdrop

step 4 (optional): add soy sauce, salt, pepper, and any other seasoning you want (for taste). when the egg cooks, it mixes in with the flavoring packet and into the noodles and it's reeeal yummeh. and it doesn't taste like egg either, ironically, it just has this really good taste but it's not a distinct egg taste.


note: a lot of people, including me use water boilers (that little machine thing where you push the button and boiling water comes out) for ramen. when making egg drop soup i don't use these, since it takes some time for the egg to cook and i don't think the water from the boiler remains hot enough to thoroughly cook it.
