Un-Fried Catfish Appliances Needed: Oven Level of Difficulty: hard
Light weight vegetable oil cooking spray 1/4 cup cornmeal 1 tsp dried thyme 1 tsp dried basil1/2 tsp garlic powder 1/2 tsp lemon pepper 4 tsp blackening seasoning Four 4-ounce catfish fillets (or Tilapia) 1/2 tsp paprika
Preheat the oven to 400 degrees.
Spray the vegetable oil over the baking sheet 3 times to coat.
Put the cornmeal, thyme, and basil on a large plate and mix well.
Sprinkle 1/8 tsp of the garlic powder, 1/8 tsp of the lemon pepper, and 1 tsp of the blackening seasoning on each of the catfish fillets. Coat the fillets thoroughly with the cornmeal mixture and transfer them to the prepared baking sheet. Dust each fillet with 1/8 tsp of the paprika. Coat the catfish lightly with the cooking spray.
Place the baking sheet o the bottom shelf of the oven. Bake for 20 minutes. Reduce the heat to 350 degrees and bake for about 5 minutes more, until the crust is golden and the fish flakes easily.

Sweet and Sour Fish Appliances needed: Deep fryer? Level of Difficulty: stressed
Needed Fish 450 g fish fillets, skinned, boned and cubed (Must be white and at least 2 cms (or more) 1/2 teaspoon Chinese five spice powder 1 teaspoon light soy sauce 1 egg, lightly beaten 2-3 tablespoons cornstarch Sauce 1 cup unsweetened pineapple juice 1/4 cup distilled vinegar 1 tablespoon soy sauce 1/3 cup brown sugar 1/4 cup ketchup 2 tablespoons cornstarch 1/4 cup unsweetened pineapple juice or water
Directions 1.Put the fish in a bowl. Sprinkle over the five-spice powder and soy sauce, then toss gently. 2.Cover and leave to marinate for about 30 minutes. 3.Dip the fish in the egg, then in the cornstarch, shaking off any excess. 4.Half-fill a wok with oil and heat to 190oc. Deep fry the fish in batches for about 2 minutes until golden. 5.Drain and keep warm. Carefully pour off all the oil from the wok and wipe clean. 6.In a small saucepan, combine the 1 cup pineapple juice, vinegar, soy sauce, sugar and ketchup. 7.Stir over moderate heat until simmering. 8.Dissolve the cornstarch in the 1/4 cup pineapple juice or in water. 9.Stir into sauce; cook until thickened, stirring constantly. 10.Heat the wok until hot. Add 2 teaspoons of the oil and swirl it around. Add the garlic and ginger and stir-fry for a few seconds. Add the spring onions and green capsicum and stir-fry over a medium heat for 2 minutes. 11.Pour in the sauce and cook, stirring until thickened. Stir in the remaining 1 tablespoon oil and add seasoning to taste. 12.Pour the sauce over the fish and serve at once

Sorry for not posting something until now ^^;
"Shrimp Toast" - 12 Large shrimp, de-veined with tails intact - 1 raw egg - 2 1/2 tablespoons cornstarch - 1/4 teaspoon salt - Dash of pepper - 3 slices of white bread (no crust), cut each slice into four pieces - A slice of cooked ham, cut into 1/2 inch pieces - 1 hard boiled egg yolk cut into 1/2" pieces - 1 green onion (finely chopped)
1. Cut a deep slit on the back of each shrimp (a.k.a. "butterfly") and press gently to flatten them.
2. Beat the raw egg, cornstarch, salt, and pepper in a large bowl until blended. Add shrimp. Toss shrimp until well coated.
3. Place 1 shrimp cut-side down, on each bread piece and press gently into the bread.
4. Brush a small amount of egg mixture over each shrimp.
5. Place 1 piece each of ham and egg yolk and a tiny portion of 1/4 teaspoon of onion on top of each shrimp.
6. Heat 2 inches of oil in a wok or a large skillet over medium high heat to 375 degrees. Add 3-4 bread pieces at a time. Cook until golden (1 to 2 minutes on each side).
Drain them on paper towels and enjoy !

Kebabs are possibly some of the foods most friendly to the beginning chef. Anything is improved by being on a stick. Veggies a yawn? Put it on a stick and grill it. Beef cubes, chicken cubes? What could be more boring...put it on a stick!
That said:
Shrimp and sausage kebabs
What you'll need: Shrimp (the already peeled/deveined frozen kind works just fine. These days its hard to get decent "fresh" shrimp. Its never really fresh, anyway) Your favorite non-breakfast sausage (the dill and grease of breakfast sausages do not complement shrimp well) Salt Pepper Kebab sticks Oil A toaster oven or a conventional oven
Slice the sausage into thick, substantial rounds. Alternate the shrimp and sausage on the skewers. Brush with a little oil, season with salt and pepper. Lay them on a foil-lined baking tray and pop under the heat of an oven or toaster oven.
Wait until the shrimp has reached a nice opaque white and pink color and aren't squishy to the touch - then you'll know they're done.
The sausage will lend the shrimp its meaty, well-seasoned flavors so you don't need to go overboard with additional seasonings yourself.
If you're inclined, you can jazz these kebabs up with: Chorizo sausage (my favorite with this simple recipe. Smoky, chewy, salty pairs well with shrimp) Bacon! Sliced green onions skewered on the kebabs Cayenne pepper Lime or lemon

I get fresh shrimp! =D
Our neighbor across the street always has fresh shrimp, so when we're feeling extra shrimpy, we buy a pound off him. Mister James is a very nice man.
Skewered shrimp = Awesome

All the "fresh" shrimp we get here these days have been previously frozen then thawed by the market and passed off as fresh. They taste heavily of the chemicals used to preserve and disinfect them.

Tuna Melt over bread.
1 Slice whole weat bread Miracle whip if desired. Any cheese wanted.
Mix tuna however you want it, plain, with mayo or miracle whip, some even like it with black olives or apple slices. Just mix the tuna first.
Put the tuna on a bread slice. Place your favorite cheese and microwave for about 15 seconds, give or take a few.
Enjoy! Ok, I will post more complex recipes soon but his is good for people rusing out of the door with hardly any time.

Here's is a grated avocado and seafood recipe. You'll need an oven.
Ingredients: 2 avocados A can of crab 2 celery sticks, chopped 2 green onions, chopped Half a green pepper, chopped Salt and pepper Lemon juice Half a cup of grated Gruyere cheese A cup of bechamel sauce
Cut the avocados in halves and remove the pulp. Keep the empty rind, as you'll need it later. Mix the avocado pulp with the crab, the vegetables and half the cheese. Add salt and pepper as you wish. Put the mix in the avocado rinds and cover with the rest of the cheese. Put in an oven on "broil" for 6 to 8 minutes. Pour on bechamel sauce and serve.
You can also replace the crab with lobster, shrimps or tuna.
