correct me if I'm wrong...
They can't see your credit card number. They can't change your email address that you use on your WoW account. They can change your password.
So, if someone gets into your WoW account, all they can really do is change your password and sell your stuff.. They can change the payment details, but they can't actually use your credit card, right?

Sounds about right.
As far as payments go, it'll only show the last 4 digits of a credit card used for the most recent purchase I believe, and you're required to enter the full thing again if you change the payment plan or resubscribe.
If it has happened to you or you're worried that it might, you can contact Blizzard by phone or e-mail and send them any necessary proof to get your account back.

No, it happened to a friend of mine.
For some reason he logged onto the WoW site and saw the his account was reactivated when he closed it a couple of months ago. So, of course, he logged in and saw that a lot of his stuff is gone. They left his epics on his characters, which is odd, and some stuff that is hard to get (he still has his fiery warhorse from Kara) but they took his skinning knife and his fishing poles... Anyway, he was concerned about the card details because he doesn't want to deal with charges that he didn't do and he didn't want to deal with Blizzard staff because his account is still his, just some of his stuff is gone.
