I'm vegetarian and I wanted to make a chili that looked like meat chili but tasted better, so my meat-loving mother wouldn't wrinkle her nose at it xd This certainly did the trick.
Vegan Chili
Ingredients (all preferably organic):
1 medium white onion
4 medium button mushrooms
1/2 cup water
1 can tomato sauce
1 can tomato paste
1 can kidney beans (undrained)
2 cans black beans (drained)
1 can pinto beans (drained)
1 tablespoon unrefined sugar
Chili powder, garlic powder, salt, pepper, and paprika to taste
Peel the papery skin from the onion and thoroughly wash the mushrooms. Coarsely chop the mushrooms and put them in a large pot or slow-cooker/crock-pot. Grate the onion (I used a cheese grater) into the pot. Put the water, tomato sauce and paste, and beans into the pot. Stir in the sugar. Add 3 tsp. chili powder, 4 tsp. garlic powder, 1/2 tsp. salt, 1/2 tsp. pepper, and 2 tsp. paprika. If you like a spicer chili, add an extra 2 tsp. chili pepper or some red pepper flakes. In a crock-pot cook for 8 hours on high or until desired thickness is reached, stirring once or twice an hour. In a pot, simmer for 4 hours or until desired thickness is reached, stirring once an hour.
