How is that gonna work? I mean, they start at 55, do they have to go back and level them from the beginning? Or are they granted them at the level they should be for level 55 when they chose 'em?

Almost positive they will have to level them from the beginning. (I normally don't level my professions from the start anyway, so it wouldn't matter to me.)

If you roll a new profession on a character at level 55, it starts from nothing. Why would this change for death knights? (Hint: It isn't going to.)

Blizzard specifically said they didn't want Deathknights in Elwynn killing Kobolds, having them picking peacebloom is much better?

Iolol Blizzard specifically said they didn't want Deathknights in Elwynn killing Kobolds, having them picking peacebloom is much better? You've already ruined the heroic tone of a hero class if you choose to pick flowers for a living...
