You see, the heels are often considered "yucky" because of their large portion connected to the outer shell. It all goes back to the basics of cooking, where as heat teavels from the outside into the core. Because of this, the outside receives the most heat and the inside the least. This is also why bread thakes a long time to cook. You need the inside to heat, while not burning the outer crust.
