It happened randomly, I was coloring a picture, and I left were I started cause I was tired. but then when I went back on photoshop and opened the same image it had switched to grayscale sliders and won't give me the option of switching back to CMYK or RGB.
Help would be really great cause I can't find anything online.

Wow, I have no idea. I guess what I would do is save the image as it is, close Photoshop, and reopen it. If that doesn't work, then maybe save it as a different format and try again.
