In the last few episodes Uncle Iroh has become something I've never thought he could become. I wonder if they'll show him in the new episodes, "Boiling rock part 1 and 2." What do you think will happen to him?

Part of it may be that he has a new voice actor now and part of it may be for dramatic story-telling purposes, but I honestly don't think we'll see Iroh again until the end of the series. He's the awesome mentor type, and let's look at a few awesome mentor types of the past: Obi-Wan Kenobi, Qui-Gon Jin, Kamina, Dumbledore, Gandalf, and Auron to name a few.
