Can someone explain to me how a different kind of mouthpiece would affect your playing? I'm playing a 7B right now.

7B? are you sure it's not a 7C cause that is the most common one.
Well I use a 3C and the difference is it has a slightly deeper top part lol I dont' know what it's called, but it helps make the high notes easier to play.. yep.

a 7c is your standard starter mouthpiece and is good for the entire range of your trumpet.
As you change the number or letter you change aspects of the ring or cup. The letter pertains to the cup depth (c deeper than b deeper than a, etc...) and the number pertains to the ring size (higher number means thicker ring).
The shallower the cup the easier it is to hit higher registers, but it becomes more difficult for lower registers. A thicker ring helps people with various lip/mouth sizes and can help with the longevity of your embouchure during certain performances. I had upgraded to a 10.5 C and it lasted me through my entire high school career. Some people prefer other types... but it's all personal preferance. Go to your music store and talk to the folks there, they SHOULD know what they're talking about and be able to help you get what you want/need.
