Slightly spoilerish and since it's a question, if you haven't played it, you probably won't want to read this.
So I beat the game main plot storyline thing. Beat Saren and saved the council and all that jazz. Watched the credits and it brought me right back to the start up screen. I thought, "well, okay. Let's resume." Pressed resume and it brings me back to when I fought the Saren v2.0.
Should that happen or am I supposed to be able to go explore the rest of the galaxy afterwards?

Was that the last place you saved? That might be why.
