Here's a couple of renditions I can link you to right now, of Horace and Catullus. Linky!Unfortunately, she uses ecclesiastical pronunciation. Part of the Carmina Burana is in classical latin, if you're interested in checking out a CD of that, but be careful which one you do, because for some reason at least one of them uses ecclesiastical pronunciation. I don't know who was in charge of directing that!! Hehe.

So I've recently been watching the Anime Blood +. Spoilers in white- but it totally pertains to the topic --> In Blood +, the main villain, whose name is Diva, often attracts others (or causes them to morph into hideous bat people) through her supernatural vampire queen song. It's opera, and she's a first soprano- and it's entirely in Latin! It's very very pretty... the only problem is... after searching on the internet to see if I could find the lyrics, it seems... they're nonsensical. Mark Mancina just threw some Latin together and this makes meh sads. I justified it, though, because Diva spent her entire life up until she was thirty or so locked in a tower and treated as a test subject... so she isn't able to normally interact with humans, so why would she be able to write proper Latin poetry? Why wouldn't it make buttcrap for sense? Also, no one seems to have the sheet music anymore. Soo... so far I have been able to extract these lyrics: An otisio ne cado, ne cado, nemo strata da de lata, ne mos trade latu. An otisio ne cado, nemo (and then this next bit sounds like no-a, which I figured could have been nova... the only problem is she takes a slight breath between the syllables)... mi sitano lata toti moto. A menti (and then this next part is absolutely indiscernible as Latin. It sounds like sodal-sodalit-col.) Ame me. Tono. Salvo. Missa de astro. Missa de allata.
This is just what I've found, others have different thoughts on it. Some of mine is probably wrong but it's the best I could do >.O

The Denouement by I Am Ghost is sung in Latin, but thats their only song. It's a short dark rock song.

Two words: E Nomine. The E Nomine project is produced by Christian Weller and Friedrich Graner. The music is an unusual combination of techno/dance and and Gregorian singing and chanting which they label as monumental dance.
Anywho, you really out to go check them out--some notable songs include: Mitternacht, Wolfen Dar Tir in Mir, Deine Welt, Das Omen Im Kreis Des Bosen, Im Zeichen Des Zodiak, Zorn Die Zwolf Verboten Tone, and Vanter Unser. You should be able to find videos of all of them on Youtube.

The band Qntal (no that's not a typo) sings some songs in Latin. I believe that they are more of a Goth band, so I haven't heard what the songs actually sound like, but the lyrics are definitely kind of morbid. And definitely Latin. That's the main thing, right?

If you want some really good songs with themes from Latin and Greek myth, though, I recommend the band Cruxshadows. They are a goth/techno band, and yes I realize I just said I don't care much for goth, but some of their songs I love. Try Return (Coming Home) and Ariadne.
