Just today I registered for some classes at BYU Idaho. My major is English, but the class I needed was full, so I'm just going to start getting my other general education classes out of the way.
Has this happened to anybody else? Is anybody else going through it currently?

I know of three other people in BYU-I. One is actually on his mission and not even on Gaia, Idril Nienna and drgnladyblue (who doesn't pop in here very often. The latter's major I think is Graphic Design and I can't remember the former two's majors.

Classes sometimes fill up before you can get in. Check your school's particular policies but you may be able to get in later as other people drop the class for various reasons.
And speaking as an English Major myself... think really hard about what you're going to do with it and get a jump on it by volunteering or joining an internship program. Lots of jobs want you to have experience... so how do you get the experience if you can't get the job? Arrgh.

I'm going through kind of the same thing. The French class I wanted isn't offered this next semester, so I had to make a special arrangement with my teacher to take another class. Then the Theatre class I wanted was full, so I'm taking a different one, which I guess is okay because I need it all for my major.
I was looking for another 1-2 credit class that would be fun, but nothing I wanted seemed to be open. So I randomly checked tonight and the class that my roomie and I both wanted to take, which was unavailable to her 15 minutes earlier, had an opening, and I took it. You just have to keep looking at random times. Winter Semester is still 6 weeks away, and there will be a lot of new openings as the weeks go on. Just keep your eyes peeled.
Another thing you can do is talk to whoever teaches the class(es) you want and see if they can put you on a waiting list or let you know as soon as something opens up, or even if they can arrange something special so you can take the classes you want. It's worked for me and my French classes so far. Maybe it can work for you and your English classes.
