Do you plan to have any animals in your story? Or any animal characters that will probably have a significant role?
I'm thinking of maybe giving one of my characters a pet, but I think describing an animal would be somewhat difficult or maybe redundant.

I almost always have animals in my stories. They're usually significant too. In my NaNoWriMo story I'm having a hell hound puppy if that counts XD

Yep. In fact, all my main characters have animal counterparts, like a witch's familiar. They are attached the main characters as well as the villain, so they're pretty important.
As for your cooment- are you wondering how to describe them to the reader? Cuz if they are regular animals, like say, a Saint Bernard dog, then you really wouldn't have to decribe it much. Unless it had unusual markings, you could just say it was a Saint Bernard. Of course, if your animal is a fictional one, or something you made up, or is different than a regular animal (maybe it has an extra tail, or is missing a limb?), then you should go ahead and describe the critter. I know I'm gonna have to.

There are plenty of animals, but the only ones that play an important role are drifting souls that sometimes take animal form. Do they count?

There will be at least one Clydesdale horse in my story but not as a major character. There will also be a female centaur as one of the main members of the adventuring team but I don't know if she counts as an animal. sweatdrop

Actually ... no. Which is really weird, because I always have animals in my stories. I can't even think of a place to put an animal in it ...

I don't plan on having any in my story. It seems difficult. I don't know how to care for animals and how they behave. I'm also afraid I might forget about them later in the story if I ever plan to write one in.

So, I canged my NaNo project. Now I have animals biggrin
My MC's love interest has a pet drakling, which is just a little ivory colored lizard, there are wild goats living on the plains surrounding the university, and a vampire horse who preys upon the goats.
