Halloween Party Recipes!
Black Cat Cookies
1 cup chunky peanut butter 1/3 cup water 2 eggs 1 (18.25-ounce) box chocolate cake mix M&M's plain candies Red hot candies
Preheat oven to 375 F. In a large bowl, beat together peanut butter, eggs, and water. Gradually add cake mix. Mix well. Form dough into 1-1/2-inch balls. Place on ungreased baking sheet. Flatten balls with bottom of glass dipped in sugar. With fingers, pinch out 2 ears at top of cookie. Add M&M's for the eyes and red hots for the nose. Press the tines of a fork into the dough on either side of face to form the whiskers. Bake for 8 to 10 minutes. Remove to wire racks to cool completely.
Pumpkin Pie Biscotti Makes about 96
3-1/2 cups all-purpose flour 1-1/2 cups firmly packed brown sugar 2 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons pumpkin pie spice 1/2 cup mashed canned pumpkin 2 large eggs, lightly beaten 1 tablespoon vanilla extract 2 tablespoons butter or margarine 1-1/4 cup macadamia nuts, coarsely chopped
Preheat oven to 350 F. Combine flour, brown sugar, baking powder, salt, and pumpkin pie spice in a large bowl; stir well. In another bowl, combine pumpkin, eggs, and vanilla, stirring well with a wire whisk. Slowly add pumpkin mixture to flour mixture, stirring until dry ingredients are moistened. (Mixture will be very crumbly; it will gradually become moist after stirring.) Melt butter n a large skillet over medium heat; add macadamia nuts. Cook, stirring constantly, until nuts are browned. Remove from heat and cool completely. Knead or gently stir cooled nuts into dough. Place dough on a lightly floured surface and divide into 4 portions. Lightly flour hands and shape each portion into a 1 x 15" long log. Place logs 3" apart on lightly greased cookie sheets. Bake for 23 minutes; cool logs 15 minutes. Reduce oven temperature to 300. Cut each log diagonally into 1/2" slices using a serrated knife. Place slices on ungreased cookie sheets. Bake for 15 minutes. Cool completely on wire racks.
Sensational Double Layer Pumpkin Pie Makes about 6
4 Ounces cream cheese, softened 1 tablespoon milk or half and half 1 tablespoon sugar 1 1/2 cups whipped cream topping 1 graham cracker crust 1 cup cold milk or half and half 2 small vanilla flavored instant pudding packages 1 can pumpkin pie filling -- (16 oz) 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1 Teaspoon ground cloves
Beat cream cheese, 1 tablespoon of milk, and sugar with wire whisk until smooth. Gently stir in the whipped cream topping. Spread on bottom of graham cracker crust. Pour 1 cup milk into bowl, add pudding mix. Beat with wire whisk for one to two minutes--mixture will be thick. Stir in pumpkin and spices with wire whisk. Mix well. Spread over cream cheese layer. Refrigerate four hours, or until set.
