This is a harder question for me. Saber hands down is my favorite, but I like Rin, Sakura, Caster, and Rider a lot too.

I love Rin, she has her stuff together and of course she has the cool Archer as a servant...I was sad to see him leave so early on in the anime sad .
But I also love Sabre mainly for her determination to obtain the grail no matter what the cost ^^
