He'll come back in a season or two. To keep him in buisness you have to buy from his cafe a bit each season and talk to him. Katie leaves when Carl does, so if you want to whoo her or anything, you have to keep Carl in buisness.

Ship eggs, milk, butter, breadfruit, and all that stuff for cakes and sweets.
He should come back eventually as well as Katie.

I'm not sure if there is a specific way to get him back, but he does come back eventually.
