The Choco Panda Vice Captain

I used to get yellow curry all the time from a little Thai restaurant in my area. One day, I decided to make some myself. Here's my version of it.
Vegetarian Yellow Curry
Ingredients: 2 Carrots Sliced 2 Medium Potatoes Cubed 1 Medium Yellow Onion Sliced 3 Cans of Coconut Milk 5 TBS of Yellow Curry Powder 1/2 TSP of Cumin 1 Block of Extra Firm Tofu Drained and Cubed 2 TBS Vegetable Oil
Start by boiling the cubed potatoes until they're almost ready to be mashed. Drain them and return to the pot. Add in the oil, carrots, and onion and fry them on a low heat. In a separate pot, pour in the coconut milk, cumin, and curry. Bring to a simmer. Add in the tofu cubes. Bring the mixture back up to a starting boil then add the vegetables into the pot. Heat until just about to boil. Salt and pepper to taste. Depending on the brand of curry, you may need to add more. Optional: Serve with steamed white rice.

It sounds really good. No; you've never tried my actual curry. You did try a curry "stir-fry" I made once.
