Name: Flavored Chocolate Truffles

Category: Dessert
Type: Cooking

Usual Prep: 30 mins – 1 hour

Ingredients

3 cups powdered sugar
8 oz cream cheese (1 package)
12 oz baker’s semi-sweet real chocolate chips
1 T coffee flavored liqueur
1 T orange flavored liqueur
1 T almond flavored liqueur


Directions:

In a large bowl, combine powdered sugar, cream cheese and melted baker’s chocolate chips.

Divide resulting mixture into three bowls. Mix different liqueurs into each bowl. Different liqueurs or extracts may be used (ratio may not be the same).

Roll into balls. Top with toppings of your choice. Freeze.

Comments:

You will need a taster to see if you added the correct amount of flavoring into the truffle, since you will not be able to taste it. Make sure that the taster is out of the room while you mix it up.

Also, this is a great activity to do with kids over the age of 5.

Normal variations we use: melted peanut butter or pepermint extract works great. Powdered sugar is great for the topping.

Name: Glazed Mango

Ingredients: 1 mango, sugar(brown or cane), and a blowtorch twisted

Directions:
1. Peel and slice a mango in as big of pieces as possible
2. Sprinkle sugar on top of the mango slices
3. Put the blowtorch to the mango until the sugar glazes over
4. EAT! domokun

Here's a really good one for you, and it's so simple, even kids can help make it.


Name: Butterfinger Bars

Catagory: Dessert

Type: Baking

Skill level: 1

Ease level: 1

Usual prep time: 10-15mins., plus 20-25mins. cool down

Ingredients:
2/3 cup white sugar
2/3 cup white corn syrup
1 (18oz) jar of chunky peanut butter
3 cups of corn flake cereal
2 cups of milk chocolate chips

Directions:
1. Heat sugar and syrup together in heavy pan until boiling. Add peanut butter. Mix until well blended. Pour over corn flake cereal, coating the cereal well.
2. Press into a 9x13in. pan. Melt chocolate chips in a small sauce pan. Spread over batter. Chill for 20-25mins. Cut into bars.
Makes 2 dozen

Comments: Have the cereal ready in the pan before spreading the peanut butter batter. That stuff gets hard pretty fast, and you need to spread it quickly.

Quick and Easy Cheesecake
Desert

Usual prep time 5 minutes Baking Time 15-20 minutes


Ingredients


2 8 oz blocks of cream cheese


2 eggs


1/2 cup of sugar


2 tsp lemon or lime juice
Directions


Let cream cheese soften at room temp about 20-30 minutes
place in mixing bowl, add eggs and sugar and mix well
add lemon or lime juice (I use key lime juice)
Place vanilla wafer cookies in bottom of muffin pan and place one heaping tablespoon on top of cookie/wafer


Place muffin pan in oven at 350 degree for 15 to 20 minutes, till top turns golden brown. Pull out of oven and let cool completely. Once cooled I like putting 1 TBSP canned cherry or blueberry pie mix.


Any Extra Comments Makes 24 individual cheesecakes
You can also leave it plain, put shaved chocolate or any other items like that on there, you can also put chocolate chips or blueberries in the mix before baking. You can also flavor it with any other flavor like rum, maple, brandy, mint or whatever you desire.
This is a very popular item at holiday's, potluck's, as finger food on a buffet, I bring this to church for brunch. It travels fairly well as long as they are packed side by side or kept in the muffin tins. The cheesecake will deflate up cooling which makes a perfect well for the fruit.

Name of Recipe: Aunt Joan's Old Fashioned Rice Pudding

Category: Desert

Type: Baking

Skill Level: 1

Usual prep time: 1 hr. 25 min.

Ingredients:
5 cups milk
1/2 cup raw rice
1/3 cup sugar -- to taste
1/2 teaspoon salt
1 dash cinnamon -- (or 2 if desired)
1/2 cup raisins


Directions:
1. Scald milk with raw rice.
2. Add sugar, salt and cinnamon.
3. Pour into a casserole orand bake at 325 degrees for 1 hour and 25 minutes or until almost set. Stir every 20 minutes.
4. Ten to fifteen minutes before pudding is done, add 1/2 cup raisins. Mix well.
5. Let cool and enjoy!


Notes: This makes a lucious creamy pudding. Grease the casserole before pouring in the milk mixture. When doubling, use a 13" x 9" x 2" pan.

Cinnamon Pound Cake

Prep Time 15 minutes Baking time 1 hour

1 (18.25 ounce) box yellow cake mix
1/2 cup granulated sugar
1 (8 ounce) container sour cream
4 eggs
3/4 cup vegetable oil
2 tablespoons vanilla extract
4 tablespoons brown sugar
2 tablespoons cinnamon
Mix cake mix, sugar, sour cream, eggs, oil and vanilla extract well. Pour half of mixture into a greased Bundt pan. Mix cinnamon and brown sugar, and sprinkle over batter. Pour remaining batter on top. Bake for 1 hour at 350 degrees F.

5 Minute Fudge

Skill Level 1
Ease Level 1
Prep Time 15 minutes

3 c. sugar
5 oz. (2/3)c. evaporated. milk
1 1/2 sticks butter
1 pkg. choc. or peanut butter chips
7 oz. jar marshmallow cream
1 tsp. vanilla
1 c. chopped nuts

Add all ingredients and bring to boil. Then lower heat to medium and
boil 5 more minutes. Pour into pan let cool then cut into squares.

Green Cheese

Prep time 5 minutes

2- 1 lb cartons small curd cottage cheese
2- 3oz pkgs.lime jello (do not add water)
1 large can cruched pineapple...(drained)
1 large container cool whip

Dump cottage cheese into a large bowl, pour jello powder over, mix well. Add drained pineapple and Cool Whip mix well. Chill for at least 1 hour.

Peanut Butter Marshmallow No-Bake Cookies

Skill Level 1
Ease LEvel 1
Prep Time 10 minutes

1 stick margarine
2 cups sugar
1/2 cup cocoa
1/2 cup milk
1/2 cup marshmallow cream
1/2 cup peanut butter
3 cups oatmeal

In saucepan, over medium heat, melt margarine. Add sugar cocoa and milk. Bring to a boil; boil 2 minutes. Remove from heat. Add marshmallow, peanut butter and oatmeal. Mix well. Drop by tablespoonfuls onto waxed paper. Allow setting. Makes about 48.

Snickerdoodles Cookies

Prep Time 10 minutes Baking Time 10 minutes

3 tablespoons sugar
1 teasp. ground cinnamon
1 pkg. yellow cake mix (2 layer)
2 eggs
1/4 c. veg. oil

Preheat oven to 375. Grease cookie sheets. Combine sugar and cinnamon in small bowl. Combine cake mix, eggs, and oil in a large bowl. Stir until well blended. Shape dough into 1" balls. Roll in cinnamon and sugar mixture. Place balls 2 inches apart on cookie sheets. Flatten balls with bottom of glass. Bake at 375 for 8 to 9 minutes or until set. Cool one minute on cookie sheets. Remove to foil to cool completely.

Apple Crisp

Prep time minutes Baking time 45 minutes


6-8 large baking apples – granny smiths, McIntosh or whichever you like peeled and cut thinly, put into 13 x 9 pan. Mix: 5 Tablespoons Water and lemon juice to taste, pour over peeled apples.

Topping: 1 cup sifted sugar; 1 cup sifted flour; 1 teaspoon baking powder;
¾ tsp salt; 1 egg. Mix dry ingredients with fork until blended and pour over apples. Melt ¾ cup butter and pour over dry ingredient mixture. Top this with cinnamon or cinnamon sugar.

Bake 45 minutes in 350 degree oven

SOFT CHOCOLATE CHIP COOKIES

Prep time 10 minutes Baking time 8-10 minutes

1/2 cup shortening
1 cup granulated sugar
2 large eggs
1/2 cup whole milk
2-1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 (12 oz.) bag chocolate chips or butterscotch chips

Pre-heat oven to 400 degrees F. Cream shortening and sugar. Add eggs and milk together with baking soda. Mix together and add baking powder. Gradually add flour and stir well. Stir in chocolate chips or butterscotch chips. Place on a greased cookie sheet (about 1 teaspoon of dough per cookie). Bake at 400 degrees F until the edge is lightly brown. Remove from pan with pancake turner and cool on rack.

Turtle Cake

Skill Level 1
Ease Level 1
Prep Time 5 minutes, Baking time 60 minutes

1 box German Chocolate Cake Mix
1 cup nuts (walnut is my choice)
1 pkg chocolate chips
1/2 stick butter
1 pkg carmels
1 can sweetened condensed milk

Bake 1/2 cake batter half the amount of time on the box. Melt carmel, milk and butter in a seperate pan. Pour over baked cake. Add nuts and chips. Pour remaining batter over mix and bake half the amount of time indicated on cake mix box.
