I heard this recently. I really hate that I can't remember exactly WHY ...

O' Clock is really just short for "of clock", so in other words "Seven O Clock" is a spoken abbreviation of "Seven of the clock", or "It's seven on the clock"

I'm pretty sure that was what I read ... ...

1. Of or according to the clock: three o'clock.
2. According to an imaginary clock dial with the observer at the center and 12 o'clock considered as straight ahead in horizontal position or straight up in vertical position. Used to indicate relative position: enemy planes at 10 o'clock.

Yeah, if it doesn't make sense, just think of 'barrel o' monkeys'; it's not the only phrase in which that contraction is used.
