What about Champloo? Doesn't Mugen use a bit of capoeira?
Champloo is a great anime, the animation is top notch. However I wouldn't say that the martial arts are exactly realistic. Jean does some basic Aido stuff, but Mugen's style seems pretty far-fetched, but that's the nature of his character.
This thread should be expanded to simply realistic martial arts in movies. Most action movies use fights that are so heavily coreographed that a real fight would never play out like that. Some Asian martial arts films sport realistic moves and fights, but the western film industry has yet to get it right.... most of the time.
One recent example of a film with somewhat realistic combat in it is Kingdom of Heaven, which sports actual longsword combat menuevers. It's not as in-depth as I hoped, but it beats the hell out of the clumsy Lord of the Rings combat.
There was a movie I happened upon one night called Flesh + Blood or something like that... it's an older movie and I don't quite remember what the plot was... I do remember that one of the main characters wielded a German-style greatsword and he used it properly, halfswording and using the cross-guards effectively.
