Morrowind Overhaul 3.0 and Galsiah's Character Development mods.
Easily remakes Morrowind into essentially a newer-age RPG.
It doesn't have the clunky charm of the original, but it's an amazing package in its own right.
Morrowind Overhaul revamps the graphics, of everything, mind you, fixes gameplay glitches and coding issues (now you can pick pocket!), adds new content (extra dialogue, gameplay options, training people in your guild for money, purchasing assassins to kill an NPC...), and generally makes the game look much more enticing than ever before.
GCD remakes the levelling system into something more "Skyrim-like" because it's passive. You level up your skills and attributes automatically based on skill usage, much like Skyrim, BUT most significantly, it takes away the tendency to do the "train-train-train" regimen to ensure maximum character efficiency. This mod also adds magicka regeneration and removes the maximum cap on all skills and attributes (that is to say, strength and intelligence can now breach 100 with enough training, the same is true of skills like destruction or sneak).
With both mods, suffice it to say I won't have much free time this weekend.
