Ser and Estar both translate to "to be" You use ser for description (The apple is green) In english this sentence can be translated as "the apple is not yet ripe" or "the color of the apple is green" In spanish a different verb can be used to express "to be" depending on how the speaker intends on addressing the condition or esential quality.
