Scrambled Egg Sandwiches

You will need

A small or medium bowl (a medium glass will work in a pinch)
A pan, preferably non-stick
A whisk or other small kitchen utensil
A spatula

Ingredients

  • 2 medium eggs
  • milk
  • butter or margarine
  • 2 slices each of the following deli products
    • ham
    • turkey
    • cheese (your choice)
  • 1-2 tbsp diced onion, fresh
  • 4 slices bread or 2 buns (your choice)
  • salt
  • pepper


Instructions
  • Cut deli meat & cheese into squares about the size of your thumbnail
  • melt butter in pan, just enough to coat bottom
  • add diced onions to pan
  • break eggs into bowl
  • add enough milk to turn whites solid white, using as little as possible
  • stir thoroughly using wisk or other utensil until mixture is evenly colored throughout
  • pour mixture into pan with onion
  • sprinkle salt & pepper over mixture as desired
  • allow to sit until mixture starts visibly solidifying and bubbling
  • add deli meat and cheese
  • mix with spatula until completely solid
  • remove pan from heat and scoop eggs onto bread/bun.



Cooking spray can be used in the place of the butter/margarine.

Should make 2 sandwiches. Surprisingly filling. Good hot or cold, so if you have time to cook in the morning you can make you breakfast and lunch at the same time! wink

Open-face Fried Egg Sandwiches

You will need

A pan, preferably non-stick
A spatula

Ingredients
  • 1 egg
  • salt
  • pepper
  • butter or margarine
  • 1 slice turkey or ham deli meat
  • 1 slice cheese of your choice
  • 1 slice bread of your choice


Instructions
  • place meat on top of bread, and cheese on top of meat
  • melt butter in pan, just enough to coat bottom
  • break egg into pan
  • break yolk (optional)
  • sprinkle salt & pepper over egg as desired
  • allow egg to sit until top begins solidifying
  • flip egg, making sure it doesn't fold on itself as this will increase cook time somewhat
  • allow egg to sit approximately the same length of time as it took to solidify
  • remove egg from pan and place on top of bread, meat, and cheese


Cooking spray can be used in the place of the butter/margarine.

If you are attempting to keep the yolk semi-liquid, please take extra care regarding the whites around the yolk. Eating undercooked eggs increases your risk of food-borne illnesses. Also, if the yolk is at the side of the egg rather than the middle, sucking on it as you break it will lower the chances of it exploding out the other side and all over you and/or your clothes and surroundings.
