Though rather grim, a couple of classics people can start out with would be 20,000 Leagues and Peter (Author of Jaws) Benchley's Beast. Both of these feature tentacle creatures as rather murderous antagonists, but they both freature very extraordinary descriptions of the creatures during the climactic bits.
