My fiancé is a heavy guy (almost 300 lbs i think) and he has a very negative view of himself. I try to tell him that it doesnt matter to me, and that I love him no matter what. Unfortunately it's really getting to him, and I don't know what to do. Does anyone have advice for how I can get him to be less negative about himself?

If it's about his weight, perhaps he really wants to lose it to feel better about himself. I say, help him along the way, changing eating&drinking habits, go out for runs with him, etc. It could also be a good way to spend even more time with him?

I agree with Val.
You should reassure him and let him know all the many things that you like about him. Maybe look through this subforum to see if anything here pertains to him or would make him feel better. Maybe grab some self-esteem and self acceptance books at the library.
But you should probably also try to help him lose some weight. Because if he weighs 300 pounds he probably isn't healthy. And while it's important for him to like himself, it's also important for him to be healthy, live a long time, and reduce his chance of getting certain diseases! So go walking with him. Cook him healthy meals. Research low fat foods. Hike. Swim.
If he starts to see progress with his weight, it might do wonders for his self-esteem and be a lot better for his overall health.
