Nestle Chocolate Cream Pie

Recently acquired an old Nestle cookbook printed in '87, and adapted a pastry puff recipe to serve as a pie recipe (it wasn't hard, all I did was put the whole mess into one pie instead of dividing it between pastries)

You Will Need
  • 2 tablespoons sugar
  • 4 teaspoons flour
  • 1/8 teaspoon salt
  • 1/2 cup milk
  • 1 egg yolk
  • 1 cup chocolate chips
  • 1/2 cup heavy cream, whipped
  • pie crust


I use premade pie crust, because I am a lazy lazy bum.

Instructions
  • mix salt, sugar, flour and milk over low heat
  • bring to a boil, stirring constantly
  • add egg yolk, mix thoroughly
  • add chocolate chips
  • stir until mixture is smooth
  • remove from heat and allow to cool
  • gently mix chocolate and cream together
  • pour into pie crust
  • place in refrigerator to set


For presentation, my favorite method is to use mini chocolate chips, as you can then mix more in or sprinkle them on top. For texture and richness, I prefer dark chocolate.

WHITE CHOCOLATE DOES NOT WORK. The consistency is off and the pie will come out soupy.

So far there has been one successful experiment in replacing half of the chocolate chips with peanut butter chips instead.

Lacking actual mint chips, I substituted half chocolate chips & half Junior Mints. The consistency was not... consistent. One came out soup, the other came out firmer but still a little too squishy.

I picked up some dried banana chips the other day, I've been considering making another peanut butter batch to just dip the bananas in.

A layer of sliced strawberries over the top would both look and taste nice. Perhaps a dusting of powdered sugar for that extra touch?

Yeah, I'm googling pie recipes like a fiend. You may even be able to make a lemon pudding and add strawberries...god I wish it was summer.

I have a plain ol' lemon pudding recipe. It's like lemon meringue pie, minus the meringue... and the pie xd

And the recipe is only for pudding, not the whole pie.

I would like to attempt a full lemon meringue pie at some point, though.

Good god woman,
Your going to make me run all the way to Publix just to see if they have the ingredients.
And I'm thinking that maybe you could add banana slices on the top of the pie as well as mini-chocolate chips for display.
