Okay... I've decided I want to start writing, but I just can't figure what I want my format to be. I've been playing with the idea of an epistolary, but now I'm not so sure I like that idea, because it doesn't leave much room to really explore more than one character...Generally, my favorite point of view to write in is thrid person omniscient, but I've been dabbling in first person lately and I'm not sure which I like better at the moment... I just can't figure out the basic formatting!

Hm... I say one should be experienced in more than one format, but that is me. Keep to one format though, as most readers can't follow if you keep going from one point of view to another. Now, there are exceptions to every rule, including this one. If you want to play around, I say go for it. Just do what makes you happy, as that is all writing is intended to do.
My normal format is omniscient as well, but I go to first person as well.

I don't think I could ever sit down and actively decide which point of view to use, what kind of style to use, or any of those. When I stumble across an idea, all of those things are inherently presently within the story that begins to grow and I could never change it. The writing styles among some of my works are worlds apart, not because I chose them to be that way...but because the idea formulated that way. Everyone has their own way of doing things and their own way of approaching writing, but for me POV is something that becomes a part of the plot as soon as I have thought of it...so I can't really offer any advice on picking one. I've never had to "pick" one. xd I'm no help at all, worst VC ever!

Meh... I'm just not sure I like third person omniscient right now, because I'm kind of interested in trying to make the reader discover things along with the characters, instead of knowing everything in advance. And for that kind of thing, an omniscient point of view doesn't really work.
So, I thought about doing an epistolary. But, I'm not quite sure I like the restrictions put in place by an epistolary. For example, there's on conversation I want to include, but if I were to write an epistolary it couldn't happen for two reasons. One, the narrator wouldn't have been present. Two, people generally don't record conversations word for word in letters or diary entries. So if it were an epistolary, I couldn't really have any conversations, which I'm not sure I like.
But, if I start trying to write third person, I'm afraid I'd start drifting towards an omniscient point of view...
