They give to charity. Stephenie has said so.
Carlisle also spends a great deal of money medically to help out humans.
When you can have whatever..and you're going to live forever..why not splurge? It's just one way to spice up a never-ending life.

I actually didn't have a problem with this because there are several factors in this. 1. Alice can see every good investment and what will happen if they put their money in certain places. 2. They've had 100+ years each to save their money. 3. People are afraid of them so it isn't like they're going to steal or trash their stuff. So basically there is no risk in investing so they can make the largest profits possible, they've saved since they started playing the market and possibly before, and there isn't any fear of thieves or anything because humans are instinctively afraid of them. So why wouldn't they be rich? I think it'd be weird if they didn't have a good deal of money. For fans of other big vampire authors you'll notice that the vampires in their stories usually have a good if not great deal of money, so it's sort of a standard thing. You don't really find middle class vampires. Although it would be interesting if someone found a way to do that. But I just don't think a vampire could hold a steady average job because you need to apply in the day time (which may not be a problem if they are vampires like the Cullens) but most jobs give you hours during day light, and at some point in the day, the sun will shine. So it isn't possible for vampires (no matter be they Anne Rice vampires or Stephanie Meyer vampires) to work for a living in a middle class situation.
In the way they spend their money, it is said consistently that a good deal goes to medicine and charity. It isn't like they just go to a store and throw it all down for a new shirt every day. Most of the clothes they wear are probably saved through the years, and only given away or thrown out if they get too old, or too numerous. In their cars, they seem to need to drive fast, so they need horsepower, give them a break! xd But I do see your point, I thought that too in the first book, but by the second I sort of analyzed their situation and can sort of understand more..sorry, long post.
