All of them werent all THAT hard once you figured out the Materia slots.
On the Ruby weapon, I used Cloud's Ultima Weapon and Mystile armor (cuz it has more slots) and W-Summoned the Knights of the Round over and over. All your Materia must be at top level.
Emerald was one that you had to make an order system among your characters (one healer/revive, one physical attack all, and one magic user).
The only Weapon that was a pain in the a** was the Ultima Weapon!

to beat emerald weapon it took me 6 masterd KOR materia, 3 masterd mimes, 1 quadra magic, 1 counter, 1 M.counter, 1 HP absorb, 1 MP absorb, 1 MP turbo ana 1 hp > mp materia(only needed if you have quadra magic paired with KOR(since KOR takes 250 mp normally and it wouldnt quadra summon with 999mp)(also it will now take 350mp because of mp turbo meaning that this is the only way of quadra summoning KOR)
with this combo cloud died every time emerald weapon had a turn
but it took me half an hour to beat it
on the other hand it onl took me 10 mins to beat ruby
to beat ruby all it took was master summon, mp absorb, hades, KOR,hp absorb, mime
all you need to know when trying to beat weapons is who to give materia to and how to set up your materia combo

Emerald weapon took me forever. What I did was get the underwater materia and equipped it, then I only put as little materia as I could on each of them. Then Vincent got hit with the storm move and got the lucky seven limit, with him doing that and Cloud and Red doing summons/omnislash/limits I finally beat him.
As for Ruby truthfully all you had to do was have cloud the only member of the party left then put the Knights of the Round materia with an HP absorb. You also put a mime materia on him then mime every round. Cheap I know, my knights of the round did about 100k damage per summon (about 9900 per knight) so it took about 10 turns.

Right now I'm having issues with Ruby, but then I've been leveling up my materia like mad.... And I haven't even tried Emerald yet, though I do have the necessary items for it.

Well I haven't actually beaten any of the Weapons entirely. Ultimate Weapon I fought off in the scene where it's attacking Mideel, but that's about it (though I'm right before you have to fight Diamond Weapon...just taking time to raise chocobos to get Knights of the Round). I watched my cousin defeat Emerald Weapon, and that was pretty cool. ^_^ I haven't seen anyone beat Ruby Weapon though.
To me that one seems the hardest, with the whole arms thing.

i didnt have any trouble really. But if i had to decide it would be Ruby Weapon. it took me about 4 tries but i eventually figured it out.

Seriously, does anyone look at the links people post? You can one-hit kill any enemy in the damn game with Vincent. This is why, as soon as you get Vincent, you put his a** in your party and rev up his killing ferocity.
Seriously though, look at the link I posted earlier. End. Of. Story.

i thought that emerald was hard but ruby did take a few tries to beat but in the end i beat them both smile

Ruby, definately. I could beat the other two fine but even with KOTR I couldn't kill him

they where all hard for me, then again i never took the time to actually level up and really fight them

Thats an easy one, Ruby because even before i fought him i spent all my money on healing items (Phoenix downs, ethers potions...etc.) it only took 1 try but it lasted FOREVER.

honestly i found all of them pretty easy but ruby was the hardest even though it only took 10 min. i was a little too strong.
