Definitely be an Unspeakable! I'd get to know all kinds of secret secrets that no others were entitled to know. It'd satisfy my curiosity tremendously.
Would you rather be paired up with Neville in potions, or with Draco during Care of Magical Creatures?

Neville in potions, I think he's fine with the right person to calm him while Severus harasses him. And with me there - Severus wouldn't do that because he'd get in trouble and would have to sleep on the couch. xd
Would you rather: work with dangerous animals (ie dragons) or work with dangerous plants (ie Devil's Snare)?

Luna, definitely! Imagine the special circumstances! And she grew up in a Wizarding environment, while Hermione grew up in our known muggle one.
Would you rather play Quiddich, or create potions? (boring question, I know. But I couldn't think of anything else at the moment..)

Potions, of course! My darling Sev can assist me - looong hours together pushing our minds to the limit creating and modifying potions to improve their outcomes! smile

Ummm I would have to say Basilisk fang, because there from snakes, and I'm scared to death of snakes, and that would mean I would have faced my fears (and lived lol) when I got the fang.
While were on the subject of Horcruxes................

The locket. I think they both has the same affect on you. And the locket looks more awesome, and I'm more fond of lockets, then rings. Though I do love my two rings!
Would you rather take a dive in Hogwarts lake in the winter for three hours, or being locked up in the Chamber of Secrets for a day?

Metamorphmagus - no doubt! It'd be great to change your appearance at will (no bad hair days again!) and you could gather some great information that way. smile
