Neither sex nor gender are simple or easily defined. Everyone has their own opinions about what they mean. I suppose I could have a go at giving my own definitions for them, though.
First off, they are completely different things. Sex is not the same as gender, nor does it determine gender.
Gender is socially constructed - it is a set of pseudo rules for how people are supposed to act, dress, behave, think.
Sex, on the other hand, is often thought of as biological - males have a p***s, testicles, XY chromosomes, etc; females have a v****a, ovaries, XX chromosomes, etc; and then there's hermaphrodites who combinations of these things. I don't think this is a good way of categorizing people, because when we label people as male, female, or other then we start to tell them that they should behave in specific ways according to their sex. Men are supposed to act one way, women another, and hermaphrodites are supposed to pretend they fit into one of these categories.
Anyway, I could talk about this forever, but I should probably stop for now.
