Think less setting up a good wall, and think more setting up a good situation for your sweepers to come in.
For example, Arkie had a Starmie when I fought him. And most, if not, every time it came in, I predicted it would either do a Water or Psychic attack so I switched in Umbreon or Spiritomb, which are both defensively trained and immune to Psychic. It essentially wastes a turn and gives me a free turn to either Burn (which damages/turn and halves the Attack stat) or Confuse. My other wall, Clefable, can come in if I'm predicting a non-super-effective attack and can Attract or Thunder wave -- Paralysis slows down Speed and can cause a free turn. When I figure things are safe enough to sweep again, I either bring in a sweeper, or try to set up with Smeargle to up attack and speed, then clear the entire team now that it's weakened.
As for Light Screen and Reflect... Well... Personally, I think it'll improve your defenses, but because your Pokémon are so tuned for sweeping and sweeping well, I think it would just be a waste to add it in.

Funny thing is, I'm debating on whether I should keep Power Gem, or take it out for Signal Beam...

Hmm well then I was looking up Blissey, its hp can get to over 700 and SpD over 400 would that be a good pokemon to use as a wall?

Blissey, indeed, is one of the best special-attack walls of the OU tier. If you switch her in at the right time, she has the ability to not only take special attacks well, but also use Wish and Toxic, meaning you can Wish and regenerate the HP of one of your Pokémon, or badly poison one of the team's Pokémon. Poison isn't exactly my favourite status effect (I prefer Burn and Paralysis). Softboiled is also an option to keep her healthy until you are able to bring an appropriate sweeper back in.
She can get owned by physical attacks, however, so if you're not careful she can still be pwn'd by a physical sweeper.
