You know, I notice in Bleach that the enemy always seeks out only one target for a one-on-one duel, unless the enemy is strong enough to fight multiple people at the same time instead of switching back and forth between them.
That's why I feel the constant switching of targets is weird (i'm not saying it's wrong, I'm just saying I figured out why it seems odd).

Because it is obvious... the reader's mind would spontaneously com-bust.
And also, the author of Bleach seems to put off the aura of laziness...
AND ALSO, they are scrunched on time... so having a fight like that would have to be drawn out longer to show all the detail in everything...
