(Well, it all depends- my sketches are a bit lazy, and I don't get all exacting till I start inking. So I would say ink or color- personally I'm inclined to suggest inking, but that is because I'm feeling lazy at this exact second, but um front facing or profile full view probably- so you can show off your centaur coolness)
