Imperishable Night. Tis the only game I've been able to clear (haven't gotten to 6B on Normal yet, but it's coming...) so far. But besides that, UFO or SA.
PoFV is probably third, just because of the change of gameplay (I have a nagging suspicion that the next release by ZUN is going to be another versus one like PoFV)

I don't have any TouHou games ( although I am getting some on my computer soon!) but I do play them at my friends house.

Perfect Cherry Blossom, IN, UFO and SWR I have all the games but these are the ones that I like more than the rest. But when it comes down to it all of these games are just epic

I personally like PoFV (TH 9), MoF (TH 10), and TH 7.
Mostly because they where the first ones I beat. Other then that, I don't have a "favorite" game. TH 7 and 8 where really cool, mostly because I could lolknifespam in them.

Other than the fighting games, I would say I like IN the best because it's the only one I can beat on normal of the big character selection. It's fun to play around on the solo characters. ;v; Although I find the spellcards in UFO REALLY fun ( I hate the stages themselves though /cry)

I was torn between a few games. D8
I eventually settled on IN though. Spell Card system, wide selectable variety, introduced the ******** EIENTEI CAST, had the biggest concentration of EPIC MOOSIC in the series (only SA ties with it as far as awesome tracks go (Not that every Touhou game doesn't have awesome music, SA and IN just have the most of it)), fun boss fights (except ******** Reimu/Marisa, who are harder than Reisen), and finally, epic conversations.
MoF and PCB both come close though, and you can't forget EoSD or MS.
