Well there are several more rules when it comes to courting nobles, such as actual standing of the people involved, and how much benefit would come from it. Love is rarely a factor. Those of lower social status it's not really consistent. Sometimes money, sometimes convenience,sometimes love. I can't really say.

-It appears that people of higher standing only mate with one another for mutual benefit. I do not understand this. It appears that lower-ranking people actually get to choose their partners- why is this? I will inquire further.-
I see. What are these so-called 'benefits'? And... convenience? Do explain.

Well two warring countries could have their monarch's children marry, thus uniting the countries.
As for the convenience, it is favorable to marry for most people. They get extra help running their lives and attention, companionship, all kinds of advantages. Some people lose sight of actual emotional attachment and focus entirely on finding anyone to marry.

Then where do courtship rituals come into play? According to some books I have read, they almost always feel "lightheaded, blissful, longingly staring into each others' eyes"... is that sort of thing not normal?
Perhaps...
