Shiva (from any of the games) has always been my favorite.
I also really liked Anima from FFX.

Odin & Diablos from FFVIII, The brothers had their moment too. The ones from X appeared a little too flashy for me

Odin from FFVIII something about appearing and killing everything just makes him awesome (even though for me he only ever appears in easy one hit kill battles)

Anima is probably my favorite...she was awesome. I also liked most of the summons in XII a lot, especially Zalhera.
