THe victory music, the chocobo music and the boss battle music absolutly rock! But I must say, I like the music where it has the buster blade and it asks if you want to start a new game or load one. I don't know if anyone knows what I'm talking about, but I like that one. I also like One-Winged Angel (of course). And I haven't really heard too much other stuff from the game that sticks out in my mind.

I have WAY too many. FF7 is my favorite game and it's one of the best music-wise. Here is a list of my favorites, I don't know the names of most of them xP Ahem:
Jenova
Jenova Absolute
The music playing in the old Ancient's village, where Aeris died
Cosmo Canyon music
Music when Red XIII finds his father's petrified self.
Aeris' Theme of course((Though it makes me cry))
One Winged Angel
Man, I just like ALL of it xD But those are my top ranking.

It really depends on which final fantasy either VII or AC
on VII it is Jenova but on Advent Children it is One Winged Angel
the piano and Advent Children One Winged Angel and really the original version of the song are just phenomenol (I cant spell the good so sorry if I butchered a word in here)

There are a lot of great songs in FF7 but I'd say the best are (in this order)
one winged angel, tales of a great warrior, sending a dream into the universe cosmo canyon theme, and aeris' theme.
