I really enjoyed "Dragons and Unicorns: A Natural History," "Dragonology," (beautiful artwork, though unrealistic content, directed more towards children) "Dragons: A Guide to the Modern Infestation," "The Dragonlover's Guide to Pern," and of course concerning the last one anything by Anne McCafferey. xD Her dragonriders of Pern series is amazing.

Let's see...if I think of any others I shall post them.

I read a book that put a whole new twist on dragon ideals, called Dragon Slippers. It was a touching tale, especially since Shardas, the Dragon King who had been friends with the main character, turned out to be alive at the end.

Obviously Eragon, I perfer to read it over Harry.
E.E. Knight's Dragon Champion and Dragon Avenger where you take the dragon's point of view.
T.A Barron's Fire of Merlin, Merlin meets the dragon Valdearg, who desimates a whole island by himself.
Peter Dickinson's Flight of Dragons a book about how a dragon's body works, like fire-breathing and flight.
Dragonrider's of Pern is always a good choice, as is Dragonlance.
