Buckbeak the Hippogriff and Fawks the Pheonix!
I also like Crookshakes the Cat, and Scabbers the Rat (before I found out he was Wormtail and was a servant to Voldemort!)

I don't have that book (but I want it), but my favorite creatures are thestrals, dragons and owls (do they count). I love dragons so much I have 2 tattoos with dragons and I would love to have a thestral tattoo as well.
