I don't always have access to the kitchen, so I tend to make a bunch of a couple things I can freeze and eat throughout the week.
I usually have oatmeal in the morning with a glass of juice or chocolate soymilk and a piece of fruit.
I don't have the money to eat at campus (plus the selection is very limited), so I bring some fruit with me, trail mix, or a granola bar to eat between classes. I prefer to bring fruit because the squirrels on campus like it best.
When I get home I usually eat my heaviest meal because I'm a little hungry from school. I'll microwave something frozen I made earlier, like burritos, soup, sloppy steves (sloppy joe, but with tofu instead of meat), or eat plain vegetables or fruit. I usually have a storage of frozen vegetables that just take 5 minutes to steam, so that's an easy thing.
For dinner, I usually have brown rice and steamed vegetables.
Sometimes I'll go out to eat, but the only place I like to go is this Indian restaurant; we don't have any exclusively vegetarian places around here, so Indian is about as close as we get. It's amazing to go out to eat and have more than salad as an option! whee
Oh, and I'm all about bananas. I make my own banana smoothie/slushie things in the blender - a couple bananas, a very small amount of soymilk, and ice until I like the consistency. I'm not sure what that technically qualifies as, but it's fairly delicious. xD

hmm...for breakfast I love to have cereal with fruit in it and bagels, english muffins, that kind of stuff. then for lunch I have veggie burritos, cheese (sorry vegans) enchiladas, or peanut butter between 2 tortillas. For supper I like pastas, soups, salad, boca burgers (or chik'n nuggets) I also like to mix diff. kinds of steamed veggies w/ rice.

but its summer now so i dont have defined eating schedules. sometimes i forget to eat until i go out jogging and my stomach starts to violently protest. i've bean eating banana pancakes, rice and canned peaches.

my meals are kind of odd cause i dont eat wheat products in addition to my vegetarian eating.... breakfast is normally rice balls, corn chips and salsa, or corn tortilla with cheese, salsa, fried egg, and sour cream
lunch (if i have time to eat it) cheddar brocolli soup, curry rice noodles, or corn tortilla enchaladas with carmalized carrots, fried potatoes with mexican cheese salsa and sour cream.
dinner some random rice dish, spaghetti with rice noodles, or tomato salad with basalmic vinegar virgin olive oil and mozzarella

Breaks: Usually cold cereal, but sometimes hot cereal.
Lunch: Cheese and lettus salad, with BBQ sauce (I checked- No animals what-so-ever!), carrots, milk, and some kind of fruit.
Snack: Some sort of sweet thing or more fuit.
Dinner: Depends on whatever mum makes, minus the meat (I've gotten good at faking it then grabbing some peanut butter after ward)

Breakfast: My breakfast consists of a calcium chew. How exciting. lol. Lunch: Either a tofurky and vegan cheese sandwich or a peanut butter and banana sandwich. Dinner: Boca, Morningstar, and some stuff by Amy's. I also eat a lot of pasta. I LOVE vege chili. I guess it can't really be considered chili, b/c I don't even add fake meat. It's more like a bean soup. lol.
