I would choose Jolteon, so I would actually be useful... None of the others (besides Vaporeon) see any time on the field.

Well, Espeon is my favourite, yet tied with Glaceon (I love Ice types) and Leafeon (My highest level in Pt >w<) .
But Umbreon's shiny form looks cool, Jolteon has no weakness to another Eeveelution, Flareon covers its three weaknesses with one move and Vaporeon learns Ice type moves to cover the Grass type weakness (and for pure awesomeness).
So, yeah >w<
