"Uke" is actually a Japanese term from martial arts - I've heard that it's specific to Aikido from some people and general for all martial arts from others.
When you're teaching someone to defend themselves, what you usually do is stand up, call a student out and tell them to attack you so you can demonstrate how to defend yourself against the attack. You could say something like "try and grab me around the neck from behind", then the student tries to grab you, and you throw them over your shoulder, rip off their arm and beat them with the wet end. If you do that, you are giving the
nage (投げ, なげ or ナゲ), which means a "throw" or "fall". If you're the unlucky student being used as a bad example, you're the
uke, which comes from
ukemi (受身, うけみ or ウケミ) which is a way of taking a fall so that you don't get hurt.
Like
seme, uke is not usually used in
yuri, but it's fairly common in
yaoi.
