I guess I would say in between Intermediate and Expert. I have never had formal training, but I have worked as a cook for several years for a headstart preshool program. If I want to I can cook nearly anything I want. But my specialty is Southern US and Texas foods, including Tex Mex and some Cajun.
Favorite food: I love most everything, I truly can not think of ONE favorite food.
Favorite ingredient: fresh herbs and garlic
Hobbies: Herb Gardens. Currently I grow oregano, thyme, bay leaves, rosemary, chives, and lavender. I cant get Basil to grow here, but I did grow it in Texas. I also love tent camping, hiking and riding on the back of my husbands motorcycle.

Cooking level: Somewhere between intermediate and expert...I haven't finished my apprenticeship yet, but I have competed in ACF-sanctioned competitions, and I have experience as (all apprentice positions) Chef Garde Manger, Saucier, Rotisseur, Commis, Chef de Partie, Buitcher, and Patisserie.
Favorite food: I don't have one, really...I seem to favor cuisines from around the pacific rim, but I don't really have a favorite food.
Favorite ingredient: I tend to you use tarragon in a lot of my dishes...that, and shallots, and dijon mustard.
Hobbies: Roleplaying, reading, playing guitar, playing my Nintendo Wii.
