Press and hold 'Delete' to go down and flip.. Press and hold 'Insert' to go up and flip.. you have to be pressing forward at the time.
You can even fly upside down and steer, if you time it right, but as soon as you hit the ground you right yourself again automatically.
(I was in flying form when I do this but I know it works on a flying mount because I was told by a warrior how to do it and I've seen a hunter buddy of mine do it)
