I'm a bit two-sided when it comes to this subject. First, I realize and understand that Katara was deeply hurt by Zuko's betrayal. As such, an apology would be a wonderful thing- hasn't he said something along those lines already though? He did afterall, literally bow down before them. Which is a very large deal to someone who's a member of a nation in which pride is a major value.
In the same way, I think she's also being a bit... I don't know, superficial about the entire thing? She's painted him as this black and white character, evil and completely untrustworthy- when I think she is smart enough, and (as she's proven time and time again) compassionate enough to realize that there are other factors that she's not presently aware of. Factors that drove him to choose what he did. It wasn't some fickle decision he made in the heat of the moment, everything that happened to him in the preleading months lead to that one point in time and unfortunately (depending on your perspective) it was the wrong one.
I guess people could counter by saying that her mistrust towards him is completely justified- as indeed it is in a way, but I just want to say that there is a time and place for things. And when they are in a situation in which the Avatar needs a teacher in order to master the final element and so save the world.... and Zuko's the only choice- it's not the right time and place for such one-sided negativity.
I think they should do the mature thing and leave the past in the past. A new slate, a fresh start would be a wonderful thing. Until that happens though, I'm extremely interested to see just what transpires between them. It'll most certainly make for some interesting viewing!

I mean, Katara has every right to be resentful and upset with Zuko, considering everything he did, but she does need to let go of the past and focus on the team's objective.
That being said, I don't blame her for having the initial reaction of mistrust and hatred. Everyone (except Toph) felt that way when he first offered to help them. Katara's feelings are just a bit more deep-rooted, and it will take a but more time for her get over the past.
Hopefully, things will change for the better in the next episode, though. Then they'll have the rest of the season to develop a more stable relationship. =D
