Eagle Brand M & M Bars
Skill Level 1 Ease Level 1 Prep Time 5 minutes Baking time 25 minutes
1/4 cup butter or margarine 1-1/2 cup graham cracker crumbs 1 (4-ounce) can Eagle Brand milk 1-1/3 cup flaked coconut 1 cup nuts 1 cup plain M&M's
Preheat the oven to 350-degrees. Melt the margarine or butter in a 9 x 13-inch pan, sprinkle the graham cracker crumbs over the margarine. Pour the milk evenly over the graham cracker crumbs. Top with coconut, nuts and plain M&M's, press the ingredients gently with a fork. Bake for 25 to 30 minutes, Cool and serve

Kool Aid Pie
Skill Level 1 Ease Level 1 Prep Time 5 minutes No cooking or baking required.
1 ready-made graham cracker crust 1 (14 oz.) can sweetened condensed milk 1 (0.15 oz.) envelope unsweetened Kool-Aid (any flavor) 8 oz. Cool Whip, thawed
Mix sweetened condensed milk, Kool-Aid and Cool Whip. Blend well. Pour into crust. Refrigerate. Ready to eat within minutes

Banana Fritters
Skill Level 1.5 Ease Level 1 Prep Time 5 minutes Cooking time 3-4 minutes
1 cup biscuit mix 1/2 cup milk 1 egg 2 large ripe bananas 1 tsp brown sugar 1/4 tsp cinnamon
Beat egg, add milk and other ingredients. Bananas should be mashed well with fork. Drop by spoonfuls in hot pot. Brown both sides. Drain on paper towels. Sprinkle with powdered sugar. Serve hot. Serves 8.

Creamy Banana Pudding Skill Level 1 Ease Level 1 Prep Time 15 minutes
One 14 oz sweetened condensed milk 1 cup cold water One 4 oz box instant vanilla pudding 2 cups whipped topping 3 bananas Vanilla wafers
Combine milk and water. Add pudding mix, beat well, chill 10 minutes. Fold in whipped topping. Start with vanilla wafers and layer with pudding mixture, sliced bananas, wafers, and so on. Serves 4-6.

Elvis Presley Cake
Skill Level 1.5 Ease Level 1.5 Prep Time 30 minute Baking time 35 minutes
1 (18.25 ounce) package white cake mix 1 (8 ounce) can crushed pineapple with juice 2 cups white sugar 1 (8 ounce) package cream cheese 1/2 cup butter, softened 4 cups confectioners' sugar 1 teaspoon vanilla extract 1 cup chopped pecans
Prepare cake according to instructions on package. Bake in a 9x13" pan. Allow to cool. Combine pineapple and sugar in saucepan. Bring to a boil. Spoon over cooled cake. In a large bowl, cream butter and cream cheese until smooth. Add powdered sugar and beat until smooth. Add vanilla. Add pecans and mix well. Spread cream cheese frosting over cake.

Fruit Kebabs
Skill Level 1 Ease Level 1 Prep Time 10 minutes Cooking time 5 minutes
Fresh fruits, such as bananas, apples, pears, pineapple, melon, peaches, strawberries, or plums Lemon juice Brown sugar Chopped walnuts, pecans, or almonds (optional)
Peel, seed, and dice the fruits into 1-inch (2 - 3 cm) chunks. Do not peel apples, pears, peaches, or plums. Toss with enough lemon juice to coat lightly and prevent discoloring of the fruit. Thread onto wooden skewers and sprinkle lightly with brown sugar. Grill over coals or under the broiler until the edges of the fruit are lightly browned and the brown sugar begins to bubble. Sprinkle with chopped nuts if desired before serving

Grilled Tequila Pineapple
Skill Level 1 Ease Level 1 Prep time 2 hours Cooking time 4 minutes
1 ripe pineapple, peeled and cut into 1/2-inch slices, or canned pineapple slices, drained 1/2 cup (125 ml) tequila or orange juice 1/4 cup (60 ml) brown sugar
Marinate the pineapple slices in tequila for at least 2 hours, or overnight. Place on a grill over moderate heat and grill for about 2 minutes on each side, until lightly browned. Sprinkle with brown sugar and serve immediately. Serves 4 to 6.

Fruit Swirl Coffee Cake
Skill Level 1.5 Ease Level 1.5 Prep time 15 minutes, Baking time 25 minutes
1 pkg. (2 layer) sour cream cake mix 1/2 c. sour cream 1/3 c. butter or margarine; softened 1 tsp. vanilla 2 eggs 1 can (21 oz) cherry, blueberry or raspberry pie filling 1/2 c. sour cream white ready to spread frosting
Heat oven to 350. Grease bottom and sides of a jelly roll pan (15 1/2 x 10 1/2 x l"). Stir together cake mix, sour cream, butter, vanilla, and eggs in a large bowl with large spoon until dough forms. Reserve 1 cup of dough; spread remaining dough in pan. Spread pie filling over dough in pan. Drop remaining dough by scant tablespoonfuls onto pie filling. Bake about 25 minutes or until toothpick inserted near center comes out clean. Microwave frosting in microwavable bowl uncovered on medium (50%) 15 seconds. Drizzle over warm coffee cake. Serve warm or cool.

Baked Apple Cinnamon Rolls
Skill Level 1 Ease Level 1 Prep Time 10 minutes Baking time 35 minutes
1 tsp Ground cinnamon 1/2 c Sugar 1 can Refrigerated Crescent rolls, 8-oz can 2 lg Apples, peeled, cored, each cut into 8 wedges * 3 tb butter, melted, OR margarine 1/4 c Orange juice, OR water * Golden Delicious or Granny Smith. Preheat oven to 400 degrees. In a small bowl, mix the cinnamon and sugar together. Unroll crescent roll dough, separate into 8 triangles. Cut each in half lengthwise to make 16 triangular strips. Place an apple wedge on the wide end of each strip, roll up. Arrange rolls in a 9x13-inch baking dish. Drizzle with the melted butter, sprinkle with cinnamon-sugar mixture. Pour orange juice or water ONTO baking dish, but NOT OVER rolls. Bake for 30 to 35 minutes, or until rolls are golden brown, and apple wedges are tender

Mom’s Cheesecake
Skill Level: 2 Ease: 1
Ingredients: Crust: 24 squares Graham Crackers ¼ cup melted butter ¼ cup sugar 1 tsp vanilla
Middle Layer: 3 pcks 8 oz. cream cheese 1 ½ cups sugar 5 whole eggs 1 tsp vanilla
Top Layer: 1 ½ pints sour cream (=3cups) ½ cup sugar 1 tsp vanilla Directions:
For crust, crush graham crackers and combine ingredients for crust. Pack into bottom of 11x13 pan.
For middle layer, preheat oven to 325degrees. Mix ingredients for middle layer and pour over crust. Bake 40 minutes. Take out. Turn oven up to 400 degrees.
For top layer, spread over top and return to 400 degree oven for 5 minutes. Let cool. Chill in refrigerator overnight.

Fruit Cobbler
Skill Level: 1 Ease: 1
Ingredients:
½ c Butter 1 c Sugar 1 c Flour 1 ½ t Baking Powder ¾ c Milk
Instructions:
Melt butter in 9 X 15 baking pan or Pyrex dish. Mix remaining ingredients. Pour mixture on top of the butter. Do not stir. Distribute 2 cups of fruit (blackberries work well) on top of mixture. Sprinkle with 1 cup sugar.
Bake at 350 °F for 30 minutes.
Comments:
This is one of the easiest recipes that I have ever done. Taste great too.

Tetravus Name: Flavored Chocolate Truffles Category: Dessert Type: Cooking Skill Level: 1 Ease: 1 Usual Prep: 30 mins – 1 hour Ingredients 3 cups powdered sugar 8 oz cream cheese (1 package) 12 oz baker’s semi-sweet real chocolate chips 1 T coffee flavored liqueur 1 T orange flavored liqueur 1 T almond flavored liqueur Directions:In a large bowl, combine powdered sugar, cream cheese and melted baker’s chocolate chips. Divide resulting mixture into three bowls. Mix different liqueurs into each bowl. Different liqueurs or extracts may be used (ratio may not be the same). Roll into balls. Top with toppings of your choice. Freeze. Comments:You will need a taster to see if you added the correct amount of flavoring into the truffle, since you will not be able to taste it. Make sure that the taster is out of the room while you mix it up. Also, this is a great activity to do with kids over the age of 5. Additional comments on this recipe: I very rarely use the liqueurs called for in the original recipe. Actually, I don't think I ever have. My favorite variation is to add peppermint extract to the base recipe. I don't have an exact measurement for it which is why I always need a taste tester. Chocolate-peppermint truffles are great Christmas treats. 3nodding The other main variation I have done is to add melted peanut butter to the base recipe. I just melt the peanut butter in the microwave. Not all peanut butters will melt easily though. Peter Pan is the brand I usually use. Again, I don't have an exact measurement. Use however much tastes right. xd Oh, the one other thing I do is to roll the truffles in some kind of coating. My favorite things to use are chocolate sprinkles. You can also use baking cocoa, powdered sugar, chopped nuts, or anything else that sounds good.

Deserts, eh? Well, don't water your garden for a while, I suppose...
Name: Apfel Strudel
Category: Dessert Type: Baking Skill Level: 1 Ease: 1
Ingredients: 6 c Apples, sliced (tart ones preferrably) 3/4 c Raisins 1 T Lemon Rind or Lemon Juice 3/4 c Sugar 2 t Cinnamon 3/4 c Almonds, ground 8 oz Fillo Leaves (1/2 Box) 1 3/4 c Butter 1 T caster's sugar
Directions: 1. Mix apples with raisins, lemon rind, sugar, cinnamon, and almonds. Set aside.
2. Place 1 fillo leaf on a kitchen towel and brush witl melted butter. Place a second leaf on top and brush with butter again. Repeat until 5 leaves have been used, using about 1/2 c of butter.
3. Mound 1/2 of the filling in a 3-inch strip along the narrow end of the fillo, leaving a 2-inch border. Lift towel, using it to roll leaves over apples, jelly roll fashion. Brush top of the strudel with butter and more almonds, if desired.
4. Repeat the entire procedure for the second strudle.
5. Bake the strudels at 400 degrees F. for 20 to 25 minutes, until browned.
6: Top off finished strudels with caster's sugar or almonds as desired. heart

Almond Crescents
Skill Level: 2 Ease: 2
Ingredients:
2 sticks Butter (softened) ≤ 1 c Confectioner’s Sugar 1-2 T Sugar 2 tsp Almond Extract 2 c Flour (sifted) 1 c Almonds (finely chopped)
Directions:
Beat butter and sugar until light and fluffy. Add other ingredients. Shape into a ball and seal in plastic wrap and refrigerate at least one hour.
Heat oven to 350 degrees. Shape pinches from ball formed into small crescents. Bake 18-20 minutes or until faintly brown.
When completely cooled. Dust with confectioner’s sugar. Store in airtight container.
Comments Great with spiced tea at Christmas time. A bit expensive compared to other cookies.

Oreo Cookie Ice Cream Pie
Skill Level: 2 Ease: 3
Ingredients: 30 ea Oreo’s (crushed) ¾ stick Butter (melted) ½ gal Vanilla Ice Cream 3 sq Semi Sweet Chocolate ¾ c Sugar 2 T Butter 1 c Evaporated Milk 1(?) tsp (?) Vanilla
Directions: Combine first two ingredients and spread in a glass dish and freeze.
Thaw vanilla ice cream. Spread ice cream over the cookie crust and freeze hard.
Combine remaining ingredients and pour over ice cream and freeze.
Comments: This is off of one of my grandmother's recipe cards from back in the early 90s. So I'm not sure about how much vanilla.
